Well you may ask did my bread turn out this time and the answer to your question is an impressive yes.
The scales made such a difference. My other scales were definitely wrong.
This time I ventured to mix it up with the dough hook and my hand mixer. The dough was smooth and pliant and not a bit sticky. Left to rise for the morning and then a second proving. And hey presto.
A beautiful loaf when I cut into it it was light and fluffy.
